Cognacs are wine brandies made from the subtle blending of eaux-de-vie that can be of different ages and vintages. Made from a singular terroir and in compliance with regulated specifications, they have a Cognac Appellation d'Origine Contrôlée (AOC).

The age of an eau-de-vie corresponds to the age of the youngest component that goes into its blend. Cognac cannot be marketed without a minimum 2 years of uninterrupted ageing, exclusively in oak containers. Below are the most commonly used ageing terms.

VS (3 stars, selection, de luxe, very special): Minimun 2 years ageing.

VSOP ( Reserve, Old, Rare, Royal,Very Superior Old Pale ) : Minimum 4 years ageing.

XO (Hors d'âge , Extra, Ancestral, Ancestral, Gold, Gold, Imperial, Extra Old) : Minimum 4 years of ageing.
